Chocolate Chip Cheesecake Squares

1 log pre-made chocolate chip cookie dough
16 oz. cream cheese
1 cup sugar
2 eggs
1 teaspoon vanilla
topping(s)*
Bring everything to room temperature.
Don’t skip this step, it helps to ensure that all ingredients that are mixed, mix well and it’s makes the cookie dough easier to use.
Line a 9" x 13" pan with parchment paper (with paper hanging off sides, so you can lift it up after it's baked and cooled).
I made the mistake of skipping this step because I ran out of parchment paper. I sprayed the pan instead and it was very difficult to deal with; get the parchment paper.
Take chunks of cookie dough and flatten until the bottom of pan is completely covered.

Mix cream cheese, sugar, eggs and vanilla until nice and fluffy.

Pour cream cheese mixture over cookie dough layer and spread evenly.

Sprinkle topping(s) evenly over the top of the cream cheese layer.

Bake at 350 degree for about 35 minutes, until top is golden brown.

Cool then freeze -- yes, freeze! This is the magic part: After frozen, remove and slice into bars.

I used Oreo™ cookie crumbs and Heath™ bar crunch. Get creative, use what you like best – some suggestions: Oreo™ cookie crumbs (sans crème), Heath™ bar crunch, M&M’s, etc. You might want to get fancy and drizzle with chocolate – go nuts, have fun and enjoy!
